Duck confit origins


Duck confit is a classic dish in French cuisine that has been around for centuries. The word “confit” is derived from “conserver,” meaning to preserve. It has its roots in the Gascony region of southwestern France, where it was originally created as a way of preserving meat during the winter months when hunting was out of season.

Traditionally, the meat was cured in salt for several hours or overnight to draw out the moisture, resulting in a tender texture. After curing, the meat was rinsed, dried, and slow-cooked until it was tender and falling apart. Today, the cooking process has evolved, and the meat is now cooked at a low temperature for several hours until it reaches the desired texture.

To cook duck confit, a thick-bottomed pot like a cocotte is typically used to withstand the heat. This dish is a testament to the rich culinary history of France and remains a favorite among food enthusiasts worldwide.

Origin duck confit
