With the arrival of summer, more and more tourists flock to Barcelona to enjoy them at their gastronomic peak: croquettes, pinchos, piquillo peppers, mussels... What Is Foie?

Foie gras, or fuagrás, is one of the most popular and prized dishes in French cuisine. It is a food made from duck or goose liver, used similarly to pâté to spread on bread or accompany other foods and wines. Etymologically, it means “fat liver” and differs from pâté mainly in its preparation and composition, as pâté involves a different process and often includes other ingredients.

Today, foie gras is typically consumed on special occasions, such as Christmas, as it is considered a luxury dish in many countries, and therefore its value is higher than that of ordinary pâté.

Historical Curiosities of Foie Gras

Historically, this food originates from ancient Egypt, where pharaohs ordered their servants to force-feed geese to produce longer-lasting and higher-quality meat. Murals from that era depict this process.

Later, the same feeding technique was adopted by the Greeks, who used it to enlarge the livers of ducks and produce higher-quality meat. The Romans and later the Jews continued this practice, using figs to fatten the ducks’ livers. In the early Middle Ages, foie gras became a favorite dish of French royalty. This delicacy was revived by Max Rumpolt, a royal court chef, in 1581.

A Delicate and Controversial Food

Similar to wines, temperature is a crucial element when presenting, serving, or eating foie. Serving it too cold diminishes its flavor nuances, while serving it too hot can spoil it, making it taste sour.

This unique food is not available everywhere, as its production is banned in more than 10 European countries due to preparation practices considered animal cruelty. However, foie gras is rich in vitamins and minerals, with a high energy content.
