What is Burrata?

Burrata is a fresh cheese made from cow’s milk, encased in a stretched-curd “bag” with a characteristic top closure. The inside of this “bag” contains stracciatella, a creamy mixture of milk prepared artisanally to preserve its soft texture.

The name burrata comes from the Italian word “burro”, meaning butter, referencing its creamy consistency. It is a versatile food, ideal for pairing with various ingredients and creating a classic Italian antipasti with style. Although burrata and mozzarella share similar textures, they are different cheeses: mozzarella is made entirely of stretched curd, while burrata uses stretched curd only as its outer layer.

The History of Burrata

According to the official story, burrata was created in 1956 by master cheesemaker Lorenzo Bianchino, a resident of the town of Andria. During a heavy snowfall that paralyzed the region, Bianchino devised a protective mozzarella layer for milk, allowing his dairy products to better withstand the cold. This improvised invention soon became a hit in southern Italy and, over the years, worldwide.

Due to its prestige and recognition, burrata was awarded the PGI (Protected Geographical Indication) certification to protect its origin.

As we mentioned earlier, burrata is incredibly versatile and can be part of many recipes. Over time, variations such as smoked burrata or buffalo milk burrata have emerged, making it the perfect accompaniment to salads, cured meats, pasta, and appetizers.
